When people ask me what I eat...70% is green vegetables . What about the other 30% then. Well it is other colourful fruit and vegetables, grains pulses and seeds. Millenial trend as I am experimenting with blue pigment from the phycocyanin extracted from spirulina, (yep, the green algae) in my oats today. When my oats turn into pancakes!  Absolutely following my intuition on this one. Just wanted to pimp my breakfast today. Just smashed 2 ripe small ๐ŸŒ๐ŸŒbananas in some overnight ๐Ÿฅฃsoaked spiced oats. ๐Ÿฅ„Spoon in a hot pan to form the pancake, let cook until a golden crust forms then flip gently to cook on the other side. Stack them up and add your fav toppings. I choose coconut milk yoghurt, mango, blueberries, cacao nibs, coconut flakes, and a sprinkle of LSA. Spring ๐ŸŒฑ๐Ÿ€โ˜˜hits my plate with those clean and crisp flavours. I could not find anything better than to prep this little green ๐Ÿ’š gem of a dressing to generously pour onto my food this week. Yep ๐Ÿ˜„! jar ๐Ÿบsize prep to ease my time when it comes to put a meal together. In the blender: ๐ŸŒฟ1 bunch of dill, ๐ŸŒฑ1/2 bunch parsley, โ˜˜1/2 bunch of mint,  1 garlic clove,  2 tsps capers, ๐Ÿ‹juice of 1 medium size lemon. ๐Ÿ’ง2 or 3 Tbsp water, just enough liquid to help the blending. ๐ŸŒ€Blend until super smooth. ๐ŸบStore in the fridge all week long if you don't run out before ๐Ÿ˜‹  Use as salad dressing,  sauce on your veggies, pasta, tofu, or rice.
