Spent Saturday at Disneyland and enjoyed one of my favorite treats. When I was living in OC I went to Disneyland all the time and never experienced a dole whip. Well I maintained this month and I’m actually pretty happy about it. I was 6lbs up when I got back from vacation and was able to lose that weight over the last two weeks. April is the perfect month to kick start your weight loss because the 1st falls on a Monday! Anyone else guilty of the whole “Ill start Monday” nonsense? 🤣I have a lot going on this month and I am going to focus on meal prepping and decreasing snacking this month. This salad has butter lettuce, turkey breast, cherry tomatoes, red onions, olives, and artichoke hearts. I topped it all off with some dairy free ranch dressing. WHAT I EAT IN A DAY WHILE ON VACATION. In case you didn’t know I’ve been in Ireland for the past week and I thought it would be fun to do a what I eat in vacation post for your guys! The day I chose to do this was the day we took a day trip to the Cliffs of Moher, so it’s not the most typical day but gives you guys an idea. I also attached a few random pictures from my vacation. -breakfast: we had to be at the meet up point at 6:45am so the night before we grabbed some pastries and fruit to eat on the walk over. I have a chocolate chip croissant and a banana (that I didn’t take a pic of) -snack: at around 12:30pm we were pretty hungry but wouldn’t be stopping for lunch till 3pm so we grabbed some random cookies at a gift shop to eat on the bus. I ate two of them. Not the healthiest choice but I was desperate at this point. -lunch: we arrived at Galway at 3pm and had lunch at a small restaurant that serves traditional Irish food. I ended up having roasted chicken with veggies and mash potatoes, while my friend got Irish stew. Both were amazing. -dinner: by the time we got back to Dublin it was around 8pm and we didn’t feel like going to a sit down restaurant so we stopped for some meat pies. I got the chicken and veggie one and it seriously started a unhealthy obsession with them. I’m pretty sure I ate one almost every day I was on vacation 🤣🤣🤣. I’m so sad to be back from vacation but it will be nice to get back on track with meal prepping and exercising.
Last weeks meal prep is one of my all times favorites! I seriously make this recipe so often and it never gets old. It’s from @budgetbytes and it’s her Thai curry soup! I pretty much make it exactly like the recipe but I add mushroom. You could totally add extra veggies to this meal to bulk it up some if you want. If you are interested in calories my serving came out to just over 300 calories, and it’s really filling. Monthly weigh in! Slow and steady wins the race?? This month didn’t go exactly as planned, and you’ll see that in my food and exercise grades. 🔹food choices: B+ I actually improved a little bit on my food choices this month. I got really into meal prepping again and I came up with a really yummy chocolate banana nicecream recipe to kill my late night sweet tooth. This month I’m going on vacation to Dublin, so my goal is to stay on track 80% of the time while I’m there. 🔹Exercise: C this is where things went south. My goal was to exercise 5x a week.. well the first week of feb I only made it to the gym 3x. The second week I was really sick and didn’t make it at all. The third week I made it 4x and the last week I worked out 5x (if you let me count the 1st, since it was on Friday). Next month my goal is to workout 4x a week minus the week I’m in Dublin. Wish me luck!
I’ve been trying to focus more on eating Whole Foods and less on calories lately. Counting calories can make you a little crazy after awhile, especially if you don’t see the progress that you want. I’ve decided to make better overall choices and just let the weight come off as it wants. For this dish I made fettuccine in a homemade tomato sauce. I also paired it with a side salad and avocado. Sunday’s are for mimosas! This is a throw back to a couple of sundays ago when I met up with my childhood best friend for some brunch. I ended up getting a breakfast burrito with a mimosa. Although, this meal was delicious it made me realize I really can’t tolerate that much dairy in a meal. I felt bloated and had GI issues all day. Super late on posting this but the monthly weigh ins are back! I’m still on my mission to re lose the weight I gained, but I sure am glad to see the scale starting to head in the right direction. I’ve decided to give myself a grade on exercise and food choices each month to keep myself more accountable, and to figure out what I could be better at. My grades this month are: 🔹Food Choices: B- ➖I tend to do really well while I am at work, but then have one too many snacks before dinner. This month I will focus getting mindless snacking under control 🔹Exercise: B ➖since my back is still healing I’ve just started back at the gym doing some light cardio. I’ve been going 3-4 times a week for 45 minutes. In feb I will aim to go 5 times a week. You asked and you shall receive a what I eat in a day to lose weight post. This was a pretty typical day for me, and obviously I can always do better with my diet. 🔹Breakfast: I had one pre cooked kielbasa with potatoes O’Brien. I also had 2 hard boiled eggs. Not pictured was my coffee Total: 401 calories 🔹Lunch: For lunch I had a tomato basil bisque recipe from @physicalkitchness. This was probably one of the easiest recipes I’ve ever made and it was oh so delicious. I got pre formed meatballs from the butcher to make it even easier. Highly recommend. Total 372 calories 🔹dinner: I found a shepherds pie recipe on Pinterest from @tastythin. This one hit it out of the park!!! Who knew potatoes made with coconut milk would taste so good. I could eat this everyday. Total: 458 calories. 🔹snacks: 2 cups watermelon. 1 fruit leather. Peanut butter trail mix. 🔹Total 321 calories  Total calories: 1552. To be honest this is a bit low and I’ll probably make some banana ice cream tonight to bump up my daily intake to around 1700 calories. Did anyone else live off of Christmas left overs this week? I’ve been MIA on here lately and thought that I should fill you guys in on what’s been going on. I’ve had a pretty rough couple of months, and on top of that at the end of October I hurt my back and I mean I really really hurt my back! For the past nine weeks I haven’t been able to bend forward, sit for more than 15 mins, or do any exercise without being in a ton of pain. I have so much more empathy for people that suffer from chronic pain, because being in pain on a daily basis not only takes a toll on you physically but also mentally. With my lack of activity plus the holidays and stress eating I ended up gaining about 15lbs which really didn’t help my mental state. I was feeling very unmotivated, but decided I needed to pull myself out of this hole! After a long road and a lot of advice from the physical therapist at work my back is starting to feel a little better and I’ve added some low impact cardio back in.  I feel pretty confident that I will not only lose the weight I gained but also make it to my goal weight this year. Weight loss is lifelong journey and there are going to be ups and downs. The important thing is to never give up on yourself. Who else is planing on making 2019 their year?!
Can you say YUM! Last weekend I had some much needed time to get my meal prep together. It’s been cold out lately so I knew I wanted to make soup! I settled for spicy Mexican chicken soup and it did not disappoint.  This recipe was easy to make, and kept me full till dinner. It was roughly 480 calories per serving and it made 5 servings.
