Today I'm sharing with you the most decadent healthy chocolate cake recipe🎂😋 As always, I will put the substitutions for vegans! **** Recipe: - 1/3 cup cocoa powder - 1 tsp baking powder - 1/2 tsp baking soda - 2 eggs (or 2 flax eggs) - 1/4 cup skyr (or coconut yoghurt) - 2 TBS milk of your choice - 3 TBS granulated stevia - 1/4 cup maple syrup - 2 TBS melted coconut oil - 1/3 cup whole wheat flour  1. In a large bowl whisk together the coconut oil, skyr, eggs and maple syrup 2. Combine in a separate bowl the rest of the ingredients 3. Stir in the dry ingredients until well incorporated  4. Grease the mould and let it bake in an 180°C oven for about 30 minutes *You might need to add some more milk if it turns out too compact, if the mixture turns a little bit too runny, then add more flour * Use 100°/. I've made today some pretzel bites🥨 These aren't that healthy, but sometimes you just need to treat yourself😊 This vegan recipe takes quite a lot of time, but it's worth it! **** Recipe: - 1 1/2 cup bread flour -  2 tsp sugar -  1 tsp salt - 1 tsp dried yeast - 3/4 cup water (* it may vary depending on the type of flour you are using... ) - 1 1/2 TBS baking soda - 2 TBS vegan butter - extra salt to sprinkle on top  1. Mix the dry ingredients 2. Add the water to form a dough and shape it into a ball 3. Cover  the bowl with wrap and then with a towel. 4. Let the dough rest for about 10-12 hours ( it will at least double the size, so make sure the dough has enough space to rise!) 5. Flour a clean surface and turn the dough onto it. Then form the balls. 6. Combine baking soda with more water and let it boil. Add each ball for approximately 30 seconds 7. Line them in a baking sheet and brush melted vegan butter on each pretzel bite and sprinkle salt on top 8. Hi sweeties! Today's recipe is typical in Spain: Salmorejo  It has a similar taste to gazpacho,  but it's a lot denser. This recipe is also vegan and tastes delicious😆 **** Recipe - 4 tomatoes - 1 red bell pepper (It shouldn't be too large) - garlic to taste - salt to taste - 2 TBS water - 1 TBS Sherry vinagre - 2 TBS bread crumbs - 2 TBS olive oil  1. In a food processor, mix in the peeled tomatoes, red bell pepper, water and  garlic 2. Add the bread crumbs and mix until well combined  3. Mix in the rest of the ingredients and into the fridge it goes! * add Sherry vinagre and olive oil until you reach the desired texture and taste * Instead of bread crumbs, I usually use bread that was left and I use the water to soak it😊  #spanishcuisine #healthy #vegan #healthyandspanish #healthyvegan

This was today's breakfast, PB&BANANA oatmeal😍🥜 It is a simple vegan recipe that keeps you full for hours **** Recipe: - 1/2 cup rolled oats - 1/2 water - 1/2 plant milk (I usually use coconut milk for this recipe) - 1 medium banana - 2 TBS nut butter (I use PB2, but you can totally use any other nut butter) - 10 chopped raw hazelnuts - A splash of vanilla extract - A pinch of salt to taste  1. In a pan add the oats, milk, water, salt and vanilla extract. Whisk and let it cook on low heat 2. Chop half the banana and put it into the pan, allowing it to cook  3. Keep stirring until you reach the desired texture 4. Today I wanna share with you one of my favourite smoothie recipes: my banana protein smoothie🎉 It only takes a few minutes to prepare and it's really tasty❤(Each smoothie has 24 grams Protein) The nice thing about this smoothie is, that you don't need extra protein powder! It's not just healthier than regular muffins, it's also lower in calories🎉 Eventhough this recipe isn't vegan, I will put some substitutions so everyone can enjoy these beauties😆 Each batch would make about 12 muffins ***** Recipe: - 1,5 cups whole wheat flour - 1/2 tsp salt - 1 tsp baking powder - 1 tsp baking soda - 2 tsp granulated stevia - 2 Tbs chia seeds - Zest of 2 medium sized lemons - Juice of 2 medium sized lemons - 400 ml milk ( you can substitute this for any plant milk of your choice) - 150gr Skyr or nonfat plain greek yoghurt ( you could also use coconut yoghurt) - 3 Tbs coconut oil - 2 eggs (or 2 flax eggs) - A splash of vanilla extract - 3 Tbs maple syrup  1. In a bowl, whisk together the dry ingredients 2. Put the eggs, lemon juice, vanilla extract, coconut oil, maple syrup and Skyr in a separate bowl and whisk until well combined. 3. Alternate between adding the milk and the dry ingredients to the wet ones (remember: just mix until no more large lumps remain) 4. In a preheated oven (200 C°), bake them until the muffins have a nice golden brown color on top. 5. I want to share with you some of my recipes❤  These one is homemade granola with peanuts and cashew nuts🥜 It's suuuper delicious, you have to try it😍 ***** Recipe: - 1 cup rolled oats - 1/8 cup oat flour - 2 Tbs cocnut oil - 2 Tbs Maple syrup (feel free to add more if desired) - 2 Tbs peanuts - 2 Tbs cashew nuts  1. In a glass, mix the coconut oil and the maple syrup until well combined (you may need to heat it up, so that the coconut oil can melt) 2. In a large bowl, combine oats and oat flour  3. Pour in the maple-coconut oil mixture and whisk it until the oats are all covered 4. Put the oats on a baking tray and bake them on a preheated oven to 200C° for 15 minutes. Stir it, and add in the nuts. 5. Keep the granola in the oven until it reaches a nice brown colour 6.
