Yields 4 tasty tacos 🌮 . . **Ingredients** . •1 red and 1 yellow bell pepper, sliced. •½ lb button mushrooms, sliced. •1 cup of spinach or arugula. •1 avocado 🥑 •Avocado oil (spray is fine). •4 generous handfuls of our spicy 🌶 mix #micros. •4 lime wedges •4 tortillas (corn or flour are both great, but we LOVE ❤️ @sietefoods almond tortillas, wut wut 🙌🏽😊 🙌🏽) . . . **method** . •Coat skillet with avocado oil and heat over medium high. •Sauté peppers and mushrooms 🍄 until soft and browned. •Mix spinach and/or arugula with our bumpin spicy micros mix. •Warm tortillas and add bed of greens + #microgreens🌱 •Place peppers and mushrooms on greens, repeating for each taco. 🌮 . •Serve warm with a side of avocado 🥑 and a lime wedge. •#lickyourfingers 🤤 and enjoy!

Ingredients . •1.5 cups of Emerald Gardens scrumptious #kohlrabi micros. • 1 heart romaine lettuce, shredded. • 1 cup of flat-leaf parsley leaves (pick the greens of half a bundle from produce department). • 14 oz of hearts of palm (if using canned, drain first). •1 cup of quartered artichoke hearts in water (if using canned, drain first). • 1/4 pound wedge Pecorino Romano or Asiago. • Balsamic vinegar and extra-virgin olive oil, for drizzling. • Salt and pepper to taste. Ingredients •8 to 10 oz of #sunflowershoots#micros, washed and finely chopped •14 ounces (about 1 can) of artichoke hearts, drained and chopped •16 oz of cream cheese, room temperature •2 cups shredded mozzarella cheese •1 cup shredded provolone cheese •¼ cup plain yoghurt . •Salt and pepper to taste Preparation •Preheat oven to 375 degrees. •Mix all ingredients thoroughly and put in a shallow baking pan (9-inch square works), spreading evenly.
