This skinny eggplant parm is so easy to make! Pre heat your oven to 425. Slice egg plant vertically, place on baking sheet and drizzle with olive oil and minced garlic. Bake for 5 mins. Take out and add layer of tomato sauce and mozzarella cheese. Bake until cheese looks golden like this picture 😋
Normally I prefer to make my own pesto but I’ve really been feeling the Trader Joe’s Vegan Kale pesto lately (obviously, when aren’t I feeling my Trader Joe’s food?). For this dinner I sautéed broccolini in garlic and oil, and added it to pasta with pesto! Super simple, quick, and a perfect week night meal 😋
Happy Friday!! I tried this @beyondmeat burger and it’s mind-blowing how much it actually tastes and feels like meat! It may not be for every vegetarian / vegan but it’s worth a try, even for meat lovers!! I paired mine with 3 minute jasmine rice from Trader Joe’s and broccolini sautéed in garlic and oil 😋
