Currently eyeing off the ripening bananas in my fruit bowl and getting excited to turn them into this bad boy 🀀 vegan, gluten-free nana bread! 🍌🍌🍌 WHAT YOU NEED: 4 ripe nanas 1 3/4 cup almond meal 1 3/4 cup desiccated coconut 1/4 cup maple syrup (or rice malt) 1/4 cup extra virgin olive oil (I use @redislandevoo) 2 tsp baking powder 2 tsp cinnamon Lemon juice . WHAT TO DO: ☝🏽 Mash nanas. ✌🏽 Add all wet ingredients, mix. 🀟🏽 Add all dry ingredients, mix. πŸ––πŸ½ Transfer to lined baking tin, drizzle top with lemon juice. πŸ–πŸ½ Cook in a fan-forced oven at 180 degrees for 1 hour, or until golden and cooked through. ✨✨✨ Stupidly easy, stupidly delicious and stupidly good with a cuppa on a cold winters day! πŸ₯‘ MEAL PREP MONDAY ...we meet again πŸ‘©πŸΌ‍🍳 I have very busy mornings and days this week, but am lucky enough to be home most nights to prepare my dinner fresh πŸ™ƒ I’ve prepped my breakfast, snack & lunch for the week, and planned my dinner. So here’s some inspo for you πŸ‘‡πŸ½ . On the menu this week: β˜•οΈ BREAKFAST (pictured): overnight oats w/ chia seeds, LSA, zucchini, cinnamon, almond milk & berries. 🌿 SNACK: green soup (see previous post) w/ bread or rice 🌈 LUNCH: Bolognese beans - carrot, capsicum, mushies, 4-bean mix & lentils w/ quinoa & sautéed broc & bok choy 🌟 SNACK: whatever I bloody-well feel like! This will vary from rice cakes, eggs, hummus 🍠 DINNER: roast spuds w/ beetroot, corn, tomatoes & avo (will cook this as I go) . WHY MEAL PREP? πŸ₯‘ I couldn’t count the amount of times I’ve come home ravenous, with nothing prepped, and snacked my life away until I was stuffed, but not satisfied. If you have something prepared, you’re more likely to make nourishing choices, rather than stuffing your face with whatever you can get your hands on. So get cooking, good looking πŸ’πŸΌ‍♀️ 2 hours to shop, prep and clean is a small price to pay to nourish your body when it needs it! #butfirstfoodbybek #mealprepmondaybybek
Winter got you down? ⛄️ This little baby has all the goodness that will warm you riiiiight up and give your immune system the little pick-me-up it needs. Don’t let the green scare you off, I can assure you this is deeeelish! πŸŒΏπŸƒπŸŒΏ GREEN GOODNESS SOUP  1️⃣ Chop 1 whole leek and add to a pot with 2-3tsp crushed garlic & extra virgin olive oil (@redislandevoo always my go-to). Cook for 5-10 mins, stirring occasionally. 2️⃣ Chop 2 zucchini’s and 1 whole broccoli (including the stalk, coz that’s where most of the goodness comes from!), add to the pot and cook for a further 5-10 mins. 3️⃣ Add 1L vege stock, a thumb of grated ginger & a tbsp cumin. Simmer until vegetables go soggy. 4️⃣ Add half a bunch of kale & a handful of spinach and allow to wilt. 5️⃣ Transfer everything into a blender and blend that baby to a pulp. You can also use a stick blender but this gal is too impatient for that 🀦🏼‍♀️ SERVE: with a drizzle of olive oil, salt and pepper to taste, and a slice of your fave bread if it tickles your fancy. πŸŒΏπŸƒπŸŒΏ Stay warm friends, the end is so close I can almost smell the sunshine 🌻 #butfirstfoodbybek
MEAL PREP MONDAYS πŸ•ΊπŸ» It can be hard to stay on the health train over winter. But having a couple of hearty meals prepped and ready to go could be all you need to stay on the right track. Here’s a peak in my fridge this week πŸ‘‡πŸ½ πŸ₯¦ VEG CURRY - broccoli, cauli, capsicum, beans & kale. For dinner w/ some quinoa. πŸ₯• BOLOGNESE BEANS - carrot, mushrooms, zucchini, 5 bean mix & lentils. For lunch w/ steamed broc, rice, sauerkraut & avo. πŸ₯” SPUD SALAD - potato, sweet potato, rocket, spinach, carrot, cabbage, red capsicum, yellow capsicum, egg & mayo. For snack attacks πŸ’ƒπŸΌ πŸ₯‘πŸ₯‘πŸ₯‘ All of this took me a couple of hours to prep & clean, and now I don’t have to step foot in the kitchen for the rest of the week. PSA: rice will NOT make you fat 🍚 Rice is rich in carbohydrates, fibre, vitamins and minerals that are all essential for good health. 🌱🌱🌱 I find a lot of people fretting about eating rice; concerned that it is too rich in carbs, and will make them gain weight. πŸ’‘ HERE ARE THE FACTS: If you consume carbohydrates in excess to your body’s energy needs, they will be stored. Firstly, your body stores these carbohydrates in your liver & muscle tissue to use as energy between meals. This happens every time you eat! If you consume carbohydrates in excess of this, it will then be converted and stored as fat. ☝🏽 HOWEVER (this is a big one, so stay with me here): If you are consuming a diet rich is whole grains (including rice), fruits, vegetables & lean protein, excess consumption & fat gain is virtually impossible. The problem comes when our diets are overrun with processed foods that’s are typically high in calories and low in nutrients. ⚑️⚑️⚑️ Another question I get a lot is ‘what type of rice do I eat?’ Brown rice has the lowest GI value, meaning it keeps you fuller for longer, and increases blood sugar levels at a slower rate. As it contains the whole grain, it is more nutrient dense. ☝🏽 HOWEVER (again, a big one): If you don’t like the texture or taste of brown rice, it’s not the end of the world. While brown rice is the rockstar here, white rice isn’t doing so bad for itself either. Yes, it doesn’t quite have the nutrient profile of brown rice from its processing, but it will still provide you with a good array of nutrients. 🌿🌿🌿 So there you have it! LET’S TALK OILS - are they good for you? And what ones should you be using? 🌱✨ Long story short, Extra Virgin Olive Oil (EVOO) is the king of all oils 🀴🏻 🌱🌱🌱 EVOO is not to be confused with your average olive oil. EVOO is natural, and unrefined, meaning it maintains a high antioxidant profile & is packed with all the rockin’ fats your bod loves πŸ’ƒπŸΌ ✨✨✨ Most other vegetable oils go rancid when cooked with, or contain unfavourable trans fats in order to withstand high temperatures. The composition of good fats in EVOO means it’s perfect for cooking in, withstanding temperatures up to 200 degrees Celsius. EVOO is also delicious, and is perfect to incorporate in salad dressings, or simply drizzle over your veg! πŸ₯‘πŸ₯‘πŸ₯‘ My fave EVOO is @redislandevoo - the olives are pressed closer to picking, meaning it maintains the highest possible level of nutrients. Mostly I was scared what people would think, & what people would say. MENTAL HEALTH DIARIES PT 3 We see transformations posted on social media every day. Mostly physical transformations. But my biggest transformation is something you can’t see, and happened right inside my own little head. ✨✨✨ I do not ‘suffer’ from anxiety. There is nothing ‘wrong’ with me because I am anxious. My anxiety is every bit a part of me like my blonde hair, and my loud laugh. It’s not something I have to fight, I’m not a victim or a passenger in my own mind. I didn’t choose to be anxious, but I’m not choosing to suffer, either. 🌈🌈🌈 As I learnt to understand and accept this, depression slowly packed his bags and moved out. He still pops around for visits every now and again, sometimes without warning, but mostly I can recognise when he’s coming, so I can prepare, and shorten his visits. These days I’m getting much better at avoiding them altogether. Anxiety still rents a room in my mind, but he’s no longer the overbearing, inconsiderate housemate that’s up until 4am blasting music every night. 🌱🌱🌱 One of the greatest lessons I learnt is: You don’t get to choose the hand you’re dealt, but you can choose what you do with it. You could see something as a set back, or you could see is as an opportunity, a chance to challenge yourself, and to grow. 🌊🌊🌊 Today, I am grateful for my struggles - I wouldn’t be who I am today without them. I am strong. I am loud. I laugh often. I love hard. I am clumsy. I am anxious. I am me. MENTAL HEALTH DIARIES PT. 2 ‘Suffering’ from both anxiety & depression at the same time was like a constant, confusing and exhausting tug-of-war. Depression said; ‘Just stay on the couch today, what’s the point?’ And anxiety would come back with; ‘You have so much to do, you can’t just sit here and do nothing, what’s wrong with you? Get up!’ And so the cycle would continue. ⚑️⚑️⚑️ At the same time, I was trying to finish my last year of uni, working a job I hated, juggling exercise, trying to eat well (practice what you preach, right?), attempting to have some form of a social life, all while trying to keep my relationship afloat. πŸ¦‹πŸ¦‹πŸ¦‹ There were times I would just cry. For no reason at all. No trigger. I’d just cry. And then I’d cry harder because I was crying. And then I’d be so embarrassed and ashamed that I was crying over nothing that I would (yup, you guessed it) cry some more. 🌱🌱🌱 I could cope with my mental health affecting my own life, but when I saw how much it was affecting others I knew enough was enough. Isn’t it funny that we can hurt ourselves so much, but when we’re hurting someone else, that’s when we really see it as a problem? 🌈🌈🌈 It was my boyfriend at the time who suggested I should talk to someone, and I owe it to him (and myself for putting my ego aside and accepting I needed it) that I did. ✨✨✨ Reaching out & seeking help was honestly the best thing I’ve ever done. Since, I have learnt so much about my mind & myself. The biggest turning point for me was accepting myself and my anxiety for what it was. Rather than fighting it, or trying to ‘fix’ it, I learnt to sit with it, and recognise it as a part of me, rather than something that needed fixing. 🌊🌊🌊 If you’re in pain, please reach out, and seek help. Looking back on the past year like πŸ™‹πŸΌ‍♀️ This past year has been one of the toughest, but equally most rewarding years of my life. I’ve had some of the highest highs, but also some of the lowest lows I’ve ever experienced. I’m well aware that social media is a platform for people to share their highlights, but I’m all about keeping it real and sharing the lowlights too. ✨✨✨ So strap yourself in for: MENTAL HEALTH DIARIES PT. 1 For as long as I can remember I’ve experienced anxiety. Each persons particular flavour of anxiety can taste/look/feel a bit different. My particular flavour is a honeycomb crunch, characterised by severe self-doubt, social anxiety & claustrophobia - both physically & emotionally. This is difficult to explain to people, and was hard to understand myself for quite some time, especially the emotional side of things. As soon as I feel ‘boxed-in’ or restricted, I panic, hit the eject button, and pull away. I find it hard to ‘lean-in’ socially & emotionally, and used to try avoid it altogether. My panic attacks can vary from full-blown panic turmoil, to absolute shut down. 🌈🌈🌈 I’ve always been a fixer, and, convinced my anxiety was something I had to ‘fix’, set out to do just that. As my anxiety got worse, and I couldn’t ‘fix’ it, my mental health spiralled, pulling me, and everyone who was close to me, down with it. I fell into depression, which, for someone who always ‘looks on the bright side’ was something so scary to experience. I remember crying to my parents after being told I was ‘suffering from anxiety & depression’, feeling like I’d somehow failed them and failed myself. How did this happen? How come I couldn’t fix myself? 🌱🌱🌱 Disclaimer: unfortunately my story is too long to fit into one caption - so my ‘Mental Health Diaries’ will have to become a 3 part series. In no way am I sharing this for a sympathy like. I want to show that even sometimes the
HEALTH IS NOT a fad diet, or a quick fix, or a 12 week challenge. Health is not meal replacement shakes, or depriving yourself of the foods you love. Health doesn’t have a size, or a calorie count, nor is it defined by a number on the scale. Health isn’t a one-size-fits all, and looks different on everyone. 🌱🌱🌱 HEALTH IS the way you feel, the energy you have to see out your day and all it throws at you. Health is the ability to eat well, and also ‘treat yourself’ without feeling guilty. Health is learning to listen to your body, taking some time out to relax, and being okay with that. 🌈🌈🌈 Health is finding something that works for you, that helps you feel your best, long term; and something that can be sustained for life. Health is about looking after yourself now, so you don’t have to suffer later. Health is not an expense, but rather and investment for your future. ⚑️⚑️⚑️ Think about your current habits, are they sustainable? Is what you’re doing now something you can do for the rest of your life? TO FRUIT OR NOT TO FRUIT? 🌈⚑️ That is the big question. Fruit has sugar, and sugar is bad for you, so we should just avoid it altogether, right? πŸ‘πŸ‘πŸ‘ Let me break it down for you: First of all, sugars (or glucose) are your body’s and brains main (and preferred) source of energy. Your body obtains glucose from many different foods, but it’s the way that it is packaged that makes the difference. 🌱🌱🌱 Fruit does contain sugars, however they come packaged with fibre, vitamins & minerals. Packaged like this, the sugars in fruit act differently to the sugars in a something like a block of choccy, meaning there is a slower release of sugar into the bloody stream. ⚑️🌺 Health isn’t just about what you’re eating, and how you move your body; it’s about what’s happening in that big, beautiful dome of yours too! 🌈🌈🌈 Stress is so common in our day-to-day lives, that we’ve come to accept it as normal. But stress can cause an array of problems inside our poor little bods, including: -  inflammation - weight gain - digestive problems - nutrient malabsorption, leading to nutrient deficiencies - high blood pressure - fatigue - headaches - and, generally feeling pretty crappy & brain foggy (we’ve all been there, and it’s not pretty) ☁️☁️☁️ Instead of waiting until we’re overwhelmed and drowning in a pool of stress, we can start being proactive and preventing it before it happens (coz ain’t nobody got time for all those nasty things, right?)☝🏽 🌟🌟🌟 So what can we do? - set aside time each week to do something purely for you, that serves no other purpose than for you to chill out. For me, this is yoga, or a cuppa & a good book. HOW TO: THE WINTER WARMER SALAD EDITION 🌻☁️ 1 - Select your green base: kale, spinach, rocket, or a combo of all! 🌿 Get your hands dirty and massage in olive oil & lemon juice. 2 - Choose 5 veggies to roast: broccoli, cauliflower, pumpkin, beetroot, zucchini, eggplant, asparagus etc. The more colours the better 🌈  Mix your veggies in extra virgin olive oil (EVOO), red wine vinegar, garlic, cracked pepper, pink salt, AND ROAST! 3 - Choose your grain: quinoa, brown rice, wild rice etc.  4 - Choose your protein: chickpeas, tofu, egg, chicken, tuna etc. 5 - Choose your nuts & seeds: pepitas, almonds, sunflower seeds, linseeds, sesame seeds, walnuts etc.  6 - Add any raw extras: pea sprouts, bean shoots, alfalfa, cucumber, cherry tomatoes etc. 🌱πŸ₯’ 7 - Mix together, drizzle with EVOO, red wine vinegar, and add cracked pepper & pink salt to taste. After all, food is made to be enjoyed! 🌿🌿🌿 I made this for my family a couple of weeks ago and let’s just say they weren’t too impressed they had to wait for me to take pics before that could sink their teeth into it. 🌈🌈🌈 RASPBERRY & CHOCOLATE ‘NANA BREAD 🍌🍞 Gluten-free, Vegetarian, Delicious FIRST, YOU WILL NEED: 2 ripe bananas 2 eggs ¼ cup maple syrup OR rice malt syrup ¼ cup @redislandevoo (extra virgin olive oil) 2 tsp. cinnamon 2 tsp. baking powder 1 ¾ cup desiccated coconut 1 ¾ cup almond meal ½ grated lemon rind ¼ cup raspberries (fresh or frozen) ¼ cup chocolate chips ¼ cup nuts of choice (I use walnuts, pistachios & macadamias) 🍌🍌🍌 NEXT, YOU WILL NEED TO: 1 – Preheat oven to 180 degrees Celsius. 2 – Mash bananas. 3 – Add eggs, cinnamon, maple/rice malt syrup, EVOO & baking powder. Mix. 4 – Add desiccated coconut & almond meal. Mix. 5 – Add raspberries, chocolate chips & lemon rind. Roughly chop nuts. Add and mix through. 6 – Line a bread pan with baking paper. Pour in mixture. Cook for 1 hour, or until golden and thoroughly cooked. 7 – Allow to cool in pan for 15 minutes before removing. 8 – Try not to eat all at once (definitely the hardest step). πŸ¦‹πŸ¦‹πŸ¦‹ If you want to be dubbed ‘favourite child/housemate/person’ for the week, then I highly recommend this one.
